Cooking with Fire

After successfully running restaurant Ned Ludd, creating and executing a seasonally inspired menu from just a wood-fired oven, Chef Jason joins us here on the farm to share his expertise. From building the perfect fire to placement of food in the cooking space, you?ll learn how to be successful cooking with wood, charcoal, and even propane. From caramelization to carbonization?you?ll learn the right level of char with different foods to bring out the delicious flavor.

The menu will start with hearth-cooked breads, and continue to be inspired by the bounty of the garden, with meats served asade style, as a collection of different meats and sauces.ÿ Dessert will be a selection of sweet bites from the fire.

Sommelier Jean Householder will procure a collection of wines that pair beautifully with fire-roasted food for a tasting.ÿ Additional wine and beer are available for purchase.

Class culminates in a family-style meal around our beautiful barnwood tables. A tasting of a flight of Italian wines is included.ÿ ÿAdditional beer & wine is available to purchase.ÿ Non-alcoholic beverages are included.
