Foodies Night Out: Wild About Game

Most people find game meat a bit intimidating, but would love to include these lean, healthy proteins into their diets. Prepare to learn and enjoy some delicious game meat dishes that you will be able to recreate with ease! We will be working with venison, duck, and rabbit. We will start with whole duck, and learn how to turn it into two different preparations: searing duck breast to go atop a lovely spring time salad with bountiful flavor, and preserving the legs into duck confit. We will learn about different types of venison loin, how they are best stuffed and slow roasted. We will also show you some great uses for rabbit, and how to make a classic braise.
Class culminates in a family style meal around our beautiful barnwood tables.
