Teen Cooking Day Camp
Chasing chickens, planting seeds, petting piglets, pickling cucumbers. This is the vision we had when we created Middleground Farms. And we want it to be your children?ÿin our vision. We aim to provide the true vision of what it means to bring your food from the farm to the table. We’ll?ÿcover all areas of the farm to give them a better idea as to where their food comes from and how to treat the earth and animals with respect. We will work together in The Kitchen to enhance or provide their basic cooking skills to make them more confident in their kitchen at home.
Monday ƒ?? From the Coop: A welcome to the farm! A tour and introduction to what we do at The Kitchen and the farm. Then a trip to visit the ladies in the chicken coop. Weƒ??ll learn how to raise chickens, different breeds of chickens and the eggs they lay, and what to do with the eggs when we bring them to The Kitchen. Weƒ??ll learn the basics of egg cookery, from over-easy to the perfect omelet. Weƒ??ll move on to egg based sauces like hollandaise and fresh mayonnaise, and finish with souffl??s and egg-based custards.
Tuesday ƒ?? From the Garden: Weƒ??ll get our hands dirty learning about bringing things from seed to plant. Weƒ??ll talk about organic farming and the importance of “livingƒ? dirt. Weƒ??ll plant things in the garden, and harvest seeds for next year’ bounty. Weƒ??ll harvest fresh vegetables from the garden and bring them to The Kitchen. From there, weƒ??ll learn the basics of vegetable cookery & preservation.
Wednesday ƒ?? From the Dairy: Weƒ??ll learn about the magical enzymes of fresh dairy! From the care of dairy animals to the types of milk, weƒ??ll learn all about what you can do with milk. Weƒ??ll make homemade yogurt, fresh mozzarella cheese, buttermilk and ice cream ƒ?? all from scratch! And weƒ??ll use our fresh vegetables?ÿwith our fresh mozzarella to hand make pizza for lunch.
Thursday – From the Orchard & Vine: We will celebrate the magic of fruit! Fruit & baking go hand in hand, so weƒ??ll explore?ÿdifferent dough & mixing?ÿtechniques, how to make jam, and how to put those two together to make some fantastic pastry!
This camp runs daily, 1:00-4:00pm, for 12-17 year olds. This?ÿteen session will include more advanced cookery and baking.
Please let us know the name and age of your child in the comments of your registration. ?ÿIt is suggested that children come in comfortable clothes with closed toed shoes and their hair pulled back. If the weather necessitates, you may want to bring an extra pair of shoes that can get dirty. Please alert us in advance of any food sensitivities.
