Chefs Jessica & Kate will walk through a demonstration cooking class featuring a five course seasonal menu where we share the tips and tricks to creating a beautifully paired menu. 

Jean Householder, a certified sommelier and our newest team member, will educate you on the individual pairings with each course while Hazelfern Cellars educates you about the winemaking process that goes into the glass.

The $290 registration includes 2 people and a five-course meal with wine pairings for each course.  Additional people may be added to your group for $145 each. 

Socially distanced seating will be offered for parties of 2 at each of our bistro tables, and 4-8 person groups at each of our two Chef€™s tables. Masks are optional.

Founded in 2005 by Dr. Madaiah Revana, Alexana’s 80-acre Revana Estate Vineyard is situated in the heart of the Willamette Valley within the pristine Dundee Hills AVA. It is one of the most geologically diverse vineyard sites in North America if not the world with 55 planted acres on 18 different soil types. The vineyard is dry-farmed and sits between 320 feet and 650 feet in elevation. Our farming practices are LIVE Certified sustainable and are applied to cultivate ultra-premium fruit that includes 11 different clones of Pinot Noir, two different clones of Chardonnay, and one clone of Pinot Gris.

Winemaker’s Dinner Series: Chehalem

For this dinner, we welcome Winemaker Katie Santora. Katie joined Chehalem in 2012 as an assistant winemaker. In her nine-year tenure, she has facilitated every aspect of the winemaking process. Her expert knowledge of the Chehalem vineyard sites and house style made her the perfect candidate to assume the role of winemaker in 2018.

Katie considers herself a conductor as she empowers her team, ensuring everyone feels happy and productive. Winemaking allows Katie to be in tune with the grapes as they progress through the season, allowing her to have a deeper understanding of the vintage, and the world at large.

Winemaker’s Dinner Series: Lange Estate

Don and Wendy Lange founded their eponymous winery and estate vineyard in 1987 with the purchase of a thirty-acre parcel in Northern Willamette Valley’s prestigious Dundee Hills. Their move north from Santa Barbara was precipitated by a few inspiring bottles from two of Oregon’s most iconic producers: Eyrie and Erath. A call to Dick Erath (whose phone number was listed on the back label) convinced the Langes to embark on a scouting trip.

Considered New World pioneers in the production of pinot gris, Lange Estate was the first in the United States to release a barrel-fermented style, an effort that Wine Spectator senior editor Matt Kramer hailed as a “bench-mark” bottling. Wine Enthusiast proclaimed Lange Estate to be “one of the great Pinot Noir producers in the United States.”

Winemaker’s Dinner Series: Ponzi Vineyards

Ponzi Vineyards is a pioneering winery in Oregon’s Willamette Valley, founded by Dick and Nancy Ponzi in 1970. Dick and Nancy moved to the Willamette Valley in the late 1960s with a spirit of adventure and dream to produce world-class, cool climate-grown Pinot noir. In 2021, Groupe Bollinger acquired Ponzi Vineyards—the family-owned company’s first property outside France – bringing new life and opportunity to the winery. Longtime winemaker Luisa Ponzi remains at the helm, collaborating with key figures from Groupe Bollinger domaines: Champagne Bollinger, Champagne Ayala, Domaine Chanson in Burgundy, Langlois-Château and Domaine Hubert Brochard in the Loire Valley, and Delamain in Cognac.
